You ever have one of those days where you just need some cake? To be honest I never used to be much of a fan of mug cakes because most of the ones I made had a weird texture. They ultimately ended up being something not very appealing. That was until this one of course!
The “I Need Cake” Mug Cake is not too sweet, because that’s the way I prefer it. However, if you want it sweeter, add more sugar or some chocolate chips. It’s also small. There’s also no egg in this recipe. I find that eggs tend to throw off the texture of mug cakes.
Remember, you can make this to your tastes very easily. You could add chocolate chips, jam or Nutella, instead of peanut butter. You could also make it vegan by using your favourite non-dairy milk in place of cow’s milk! Whatever you choose for your gooey centre do not be tempted to leave it out because it helps keep the cake moist and rich.
In a mug, mix together the dry ingredients (flour, cocoa powder, sugar, baking powder, and a pinch of salt).
Stir in the cooking oil and milk until it is smooth. Drop a tablespoon of peanut butter into the centre and push it down into the mixture.
Microwave on high for one minute and then enjoy your mug cake!
