As you already know by now, we love to feature new and innovative foodie companies here at Vivre Le Rêve. Today we’re super excited to be featuring the Dorset Sea Salt Company. Founded in 2017, the Dorset Sea Salt Company is helmed by Jethro, an obsessed sea salt fanatic. After reading about the historic and cultural relevance of salt production in Dorset, and visiting the natural salt pans on the east weares of Portland, Jethro pondered how and why this local industry had vanished. This idea affected him so immensely that he began to conceptualize, and envisage the revival of Dorset’s local Sea Salt scene.
With mentorship, and a small loan from the Prince’s Trust (a charity that helps young people get into work) Jethro founded the Dorset Sea Salt Company.
The Dorset Sea Salt Company aims to fill this void in local industry by marrying both ancient and new production methods. The aim is to preserve the traditional methods of the industry, but at the same time shroud it in an ethical, and ecological ethos. The result of this concoction is exceptional sea salt. Every small batch harvested is part of the wider mission grounded in craftsmanship, locality, and quality.
We love that Dorset Sea Salt Company care about where our food comes from. They hand-harvest their sea salt from Britain’s purest waters along the Jurassic coastline. This renders their sea salt the cleanest, purest, and freshest sea salt on the market, offering a distinct taste of Dorset.
Due to the world famous and unique geology of the Jurassic coast, their sea salt possesses a distinct mineral profile. Rich with vital minerals, their sea salt is a healthy alternative to table salt which is laden with additives and anti-caking agents. The Dorset Sea Salt Company sea salt flakes pack a punch! They collect the mineral rich, and super clean sea water from the Atlantic by hand. This is so they can be sure that the raw material has the correct amount of salinity. After they collect the sea from their favourite spot, they then pass it through a triple filtering system. Developed and designed to preserve all the goodness from the Jurassic Coast.
After producing a concentrated brine, they watch the sea salt flakes form in gently heated pans. This is a truly magical moment. The flakes perform an almost dance like motion on the surface of the pan. And then precipitate to the depths like a gentle snow drift. They then carefully, and expertly select the perfect moment for the ice-like flakes to be hand harvested from the pans. This is the crucial moment. The last phase is to drain and dry the sea salt in closely monitored drying rooms. This is paramount in creating the perfect texture of the sea salt. That offers an explosive but gentle crunch to recipes.
Each small, treasure-like batch of sea salt they create takes devotion, care and love. It’s clear that they value the human element of production. Every stage of the production process is finely monitored and scrutinized, They believe perfection can not be rushed or hurried.
