I’m in love with these Super Easy Homemade Chicken Nuggets! They’re super easy to whip up and they disappear in minutes with both the kids and grownups too. Even though they’re baked they’re not dry at all due to the greek yoghurt, this really helps them to stay moist and tender.
Preheat the oven to 220ºC. Place a wire cooling rack, over a baking tray to rest the nuggets on as they bake.
In a wide shallow bowl, combine the breadcrumbs, garlic powder, smoked paprika, salt, and some freshly cracked pepper. Mix together until evenly combined. Pour the oil over the breadcrumb mixture, then stir until the breadcrumbs are coated in oil.
In a separate small bowl, stir together the Greek yoghurt and water until smooth. You want the yoghurt to be thick enough to coat the chicken but not too thick.
Cut the chicken breasts into small pieces, you should get about 22-24 pieces from two chicken breasts.
Dip each piece of chicken into the yoghurt mixture, then roll it in the seasoned breadcrumbs until it is fully coated. Place each nugget onto the wire cooling rack on top of the baking tray.
When you've finished coating all of the chicken pieces, transfer the baking tray to the oven and bake for about 25 minutes.
When the time's up, remove the chicken nuggets from the oven and let them cool down for about 5 minutes, then serve your super easy homemade chicken nuggets!
