Something to keep in mind – When you make any muffin recipe, remember this:

Mix dry ingredients as much as you want, mix wet ingredients as much as you want but, when you put the two together only mix until they combine. If you over mix, the muffins will be heavy and flat. This is why we ask you to only stir until moist in our recipe below. If you were to use a hand blender or stand mixer, the muffins will become tough.

Peach season may only be in summer, but you can enjoy these peach muffins all year long. My perfect muffin is bursting with fruit, and these peach muffins don’t disappoint. These muffins have a light and tender crumb with a sweet, rich flavour. This easy peach muffins recipe is simple to make, but not lacking in flavour.

You can use fresh peaches if they’re available, but this peach muffin recipe can also be made with tinned or frozen peaches anytime of the year. These peach muffins are perfect in the summer, but will also keep you cozy during the cold winter months.

These peach muffins are best the day they are made, but you can freeze them for up to 2 months and thaw them in the fridge overnight to have whenever you need them. Muffin baking trays come in all shapes and sizes, so be sure to fill your muffin cases no more than ¾ full with mixture.

Ingredients
 130 g plain flour
 85 g oats
 110 g brown sugar
 2 tsp baking powder
 ½ tsp salt
 115 g unsalted butter, melted and cooled
 240 ml sour cream
 1 large egg, beaten
 225 g chopped peaches
For the crumbly topping
 3 tbsp plain flour
 3 tbsp light brown sugar
 1 tsp ground cinnamon
 ¼ tsp ground cardamom
 2 tbsp salted butter

Method

Preheat oven to 200°C.

Line a 12 cup muffin tray with muffin cases; set aside.

In a large bowl, combine flour, oats, brown sugar, baking powder and salt.

In another bowl, whisk together butter, sour cream and egg. Pour mixture over dry ingredients and stir until moist.

Add peaches and gently toss to combine.

Scoop the mixture evenly into the muffin tray.

Make your topping by measuring out flour, brown sugar, cinnamon and cardamon into a small bowl.

Mix 2 tablespoons of butter into your mixture until it looks like crumbs. Sprinkle over each muffin.

Place into oven and bake for 16-18 minutes, or until a tester inserted in to the centre comes out clean.

Remove from oven and cool on a wire rack.
