500 Calories or Less: Easy Sausage Casserole
This is one of our favourite less than 500 calorie meals. It’s perfect if you’re looking for 5:2 diet plan ideas or just fancy something lighter for dinner. The 500 calories fast days are obviously the hardest part of the diet. The point of the 5:2 diet is that you give your body 2 fast days and 5 days where you eat normally, albeit slightly healthier. The diet has become one of the nation’s favourite weight-loss options and the fast days needn’t be as scary as they sound.
This is a delicious easy sausage casserole packed with vegetables, so it can really help you and your family up your 5-a-day intake. If you have any leftovers, make sure you store them in an airtight container in the fridge. Use within 2 days and thoroughly reheat in the microwave or oven before serving again.

Cooking Time: 30 minutes
Calories: 353 per serving
Ingredients
• 12 sausages
• 1 red onion, sliced
• 1 medium sweet potato, peeled and chopped
• 150g mango, cut into chunks
• 2tsp agave syrup
• 50g peppers, sliced
• 50g green beans, sliced
• 1tbsp smoked paprika
• pinch of cayenne
• 1tbsp olive oil
• handful fresh parsley, chopped
Method
Heat the oven to 200C
Put the sausages into a roasting tin with the red onion, potato, green beans, mango, agave and peppers. Add the smoked paprika and cayenne, then toss well to coat.
Drizzle over the oil and season. Roast for 30 minutes, tossing halfway through the cooking time.
Sprinkle with parsley and serve. Enjoy!
