How to Make The BEST Cheese On Toast


  • 300 ml milk
  • 100g Roquefort
  • 60g butter
  • 60g plain flour
  • 100g mature Cheddar, grated
  • ½ tsp English mustard powder
  • 1 tsp Worcestershire sauce
  • 1 free range egg yolk
  • 2 tbsp lemon juice
  • 1 tbsp chives, chopped
  • Pinch of cayenne pepper
  • 4 thick slices wholemeal bread
  • Rocket salad, to serve


  1. Heat the milk in a pan over a low heat for about 5 minutes.
  2. Melt the butter in a small saucepan and, when melted, stir in the flour. Cook for 1 minute then gradually whisk in the milk. Simmer, whisking, for 2-3 minutes, or until thickened. Add the cheese, mustard powder and Worcestershire sauce, stirring over a low heat until smooth. Remove from the heat and whisk in the egg yolk, lemon juice and chives and cayenne pepper.
  3. Toast the bread, then divide the cheese mixture between the four slices.
  4. Place in the grill and cook for 3-4 minutes, until golden. Serve with rocket salad.
