- Heat the milk in a pan over a low heat for about 5 minutes.
- Melt the butter in a small saucepan and, when melted, stir in the flour. Cook for 1 minute then gradually whisk in the milk. Simmer, whisking, for 2-3 minutes, or until thickened. Add the cheese, mustard powder and Worcestershire sauce, stirring over a low heat until smooth. Remove from the heat and whisk in the egg yolk, lemon juice and chives and cayenne pepper.
- Toast the bread, then divide the cheese mixture between the four slices.
- Place in the grill and cook for 3-4 minutes, until golden. Serve with rocket salad.
