Pimm’s goes with Wimbledon and the Chelsea Flower Show like strawberries, cream and champagne. Now we’re officially in the Summer months I thought I’d share my favourite way to drink it.
Ingredients (Makes 1):
1 handful of fresh mint
4 cucumber slices
4 strawberries, sliced
2 lemon slices
2 lime slices
115ml Pimm’s No. 1
1 lemon wedge
1 lime wedge
115ml ginger beer
50ml sparkling water (optional)
For this, I usually soak a pint of strawberries in Pimm’s overnight in the fridge, in a jar. I use the Pimm’s for the drinks and also put the strawberries in the drink too! This is optional, but delicious.
Fill the glass with a mixture of ice, strawberries, cucumber slices, fresh mint, lemon slices and lime slices. Remember to save a strawberry or some mint for garnish.
Add some veg on the bottom, then some ice, add some strawberries and lemon, add more ice, etc. Once your cup is full, pour in the Pimm’s and squeeze in the lemon juice and lime juice from each wedge.
Stir the mixture, pour the ginger beer over the top and finish with sparkling water. Garnish and enjoy!
