Super Simple Delicious Blueberry Brownies
- 145g dark chocolate, finely chopped
- 6 tbsp butter
- 2 large eggs
- 200g sugar
- 2 tsp vanilla extract
- 90g plus 2 tbsp all-purpose flour
- 1/2 teaspoon salt
- 150g fresh blueberries, divided into 100g and 50g portions
Preheat the oven to 200°C. Prepare an 8 by 8-inch baking pan by lining with baking paper, leaving an overhang over each end.
In a heatproof bowl set over a pot of gently simmering water, combine chocolate and butter. Melt over medium-low heat, using a heatproof rubber spatula to stir occasionally until the mixture is melted. Remove from heat and allow to cool slightly.
In the bowl of a freestanding electric mixer fitted with a paddle attachment, combine eggs and sugar. Beat until light and fluffy, about 5 minutes. Lower the speed to the mixer’s lowest setting and add vanilla extract. Continue mixing on the lowest speed and slowly add the cooled melted butter and chocolate mixture into the mixture, mixing until just combined.
Sprinkle 90g flour and the salt over the surface of the batter. Use a rubber spatula to gently fold the flour into the chocolate batter. Do not over mix. Over mixing will lead to dense, hard brownies. Simply fold until the ingredients are just combined.
In a separate bowl, toss together 100g fresh blueberries with the remaining 2 tbsp flour. Add the blueberry mixture into the brownie batter, fold the fruit evenly into the batter. Transfer the mixture into the prepared baking pan and bake in the preheated oven for 30 to 40 minutes, until the brownies are slightly risen but still moist in the center.
Transfer the pan to a wire rack and immediately gently press the remaining 50g blueberries on to the top of the brownies. Allow the brownies to cool completely before cutting into squares, enjoy!
