Buttery Bacon & Brie Mashed Potatoes

In times of stress, I find that canceling all my plans and staying in to make cheesy mashed potatoes generally helps. Cheesy mashed potatoes doesn’t fix anything, but it does put a little cushion between you and the problem whatever form the problem might take. And like all things, mashed potatoes taste better with bacon and cheese. Everyone who has tasted these Buttery Bacon & Brie Mashed Potatoes asks how to make them. With a liberal amounts of both cheese and bacon, this decadent mash is a treat for the taste buds.

In the time it takes for the potatoes to cook through, I like to get the rest of the meal going. I brown sausages and wilt a big bunch of greens in the same pan. I have a glass of whatever wine is open in the fridge. By now, things are looking up, like sunshine after the rain. A combination of flavourful cheeses and salty bacon takes these to the next level. Rich and creamy, they will add a decadent flair to your next family meal.


900g potatoes

240ml milk

125g butter

120g brie, shredded

salt & pepper

5 slices smoked bacon, cooked & crumbled

2 spring onions, sliced

handful of grated cheddar


Simmer the potatoes in salted water until tender, about 20 minutes; drain. Cool slightly, then peel.

Heat milk with butter. Mash the potatoes with the hot milk and stir in shredded brie.

Top with crumbled cooked bacon, sliced spring onions and grated cheddar.
