These Salted Caramel Brownies are rich, fudgy, intensely chocolatey and swirled with ribbons of glossy salted caramel sauce that melt into the batter as they bake. They’re the perfect blend of deep cocoa flavour and sweet-salty caramel, the kind of brownies that disappear embarrassingly fast.

Ingredients

For the Brownies

  • 200g unsalted butter
  • 200g dark chocolate (70%), chopped
  • 250g caster sugar
  • 100g light brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 120g plain flour
  • 35g cocoa powder
  • ½ tsp fine salt

For the Caramel Swirl

  • 150–200g Perfect Salted Caramel Sauce (cooled but pourable) / or the cream-free version

Method

  1. Line a 20cm square baking tin with baking paper. Heat oven to 190°C (170°C fan) / 375°F.
  2. Place the chopped chocolate and butter in a heatproof bowl over a pan of gently simmering water. Stir until smooth, then remove from heat.
  3. Add both sugars to the warm chocolate mixture and whisk until glossy.
  4. Beat in the eggs one at a time, then stir in the vanilla. The mixture should thicken slightly.
  5. Sift in the flour, cocoa and salt. Fold gently, stop as soon as there are no flour streaks.
  6. Pour half the brownie batter into the tin. Drizzle over half the salted caramel sauce. Add the remaining batter on top, then swirl in the rest of the caramel with a knife.
  7. Bake for 25–28 minutes. The edges should be set but the centre should have a soft wobble.
  8. This is the hardest part, but essential. Cool in the tin, then chill for at least 1 hour before slicing for perfect squares.

Tips for Perfect Caramel Brownies

• Don’t overbake, caramel brownies should be fudgy, not cakey
• Use a thick caramel so it doesn’t sink excessively
